For someone just getting into raw food, it can seem a little bit daunting, can?t it? So many raw food recipes call for special equipment like a food dehydrator and often can take many hours to make. If you?ve been wanting to give the raw thing a go but weren?t sure where to start, I highly recommend Raw Food Made Easy for 1 or 2 People by Jennifer Cornbleet.

Just like you, aside from super simple raw dishes like salads or fresh fruit, raw food always seemed a little bit out of reach to me. Cornbleet?s book is full of simple, tasty raw recipes! I also like that she focuses on keeping the number of servings low. If you?re cooking just for you, you can follow the recipes as-is, and for a larger family or a dinner party, you can just multiply the amounts to make as much as you need!

Demystifying the Raw Kitchen

She also dives into some basic raw cooking techniques. The book includes resources like a handy chart with soaking times for different nuts and dried fruit, and she has a nice section on setting up your kitchen to cook raw.

Most of the cooking supplies in this section are things you probably already have ? like a cutting board and blender. There are a few specialty items, but they all seem to be optional. The one optional specialty item that I think would be extra useful for a lot of the recipes in this book is a spiral veggie cutter or a mandoline. There?s a lot of chopping, and these will save you so much time!
